Yummy Wednesday: Butterscotch Haystacks

First, I want to say a BIG thank you to Piddix for including my Patriotic Pennant Banner Tutorial in their newsletter.  I feel honored!

"The Pulp" is a great read for creative ideas as well as for tips on running an Etsy shop. The woman behind Piddix, Corrina, is one of Etsy's Top Ten Sellers and she's incredibly generous in sharing her experiences.  Thanks to The Pulp, my project got picked up by craftgawker.  I am super duper thankful and excited.

Ok– what's sweet, crunchy + salty, plus you only need three ingredients to make?  Butterscotch Haystacks!

Butterscotch Haystacks

What you need:

  • A 12 oz package of Chow Mein Noodles
  • Two 11 oz packages of Butterscotch Morsels
  • A can of Spanish Peanuts
  • A Double Boiler (we used my Mom's which she's had since she got married!)
  • Tin Foil or Wax Paper
  • Cooking Spray (this stuff gets sticky)

Recipe makes 5 dozen haystacks

    Put about an inch of water in the bottom pot of your broiler.  Meanwhile tear off 4 large pieces of tin foil or wax paper. When it comes time to make the Haystacks, you need to move kind of quick.  Also grab a spoon and spray it with cooking spay.

    Here's the order of your ingredients for the top pot of the boiler:  

    1.  Butterscotch  2.  Noodles  3.  Spanish Peanuts

    Once your water is boiling, add the morsels into your top pot and start stirring (that's my Mom demonstrating, isn't she cute?)

    When your morsels are melted, add the noodles and stir-stir-stir.  Then add the peanuts.  Add a little here, and a little there, stirring them into the mix.

    After it's all mixed together, remove from heat and start making your Haystacks with a spoon.  Advice from my Mom: Make them small, because they're very rich.

     This is what the Haystacks look like.  They cool off fast, in about 10-15 minutes.

    That's all there is to it.  Eat 'em up!  Because you have five dozen, you can bring a plate over to the neighbors or give them to your friend Rebecca (which is what I did).  You'll still have enough to share with your friend Annette (who will get a drop off later today).

      Your mom is a very cute helper :-) We make these at Christmastime. We call them Grasshoppers…not sure why but they are fabulous!
