It's Yummy Wednesday… on Tuesday. This is my Mom (Eve's) Potato Salad Recipe. So delish!
3 large russet potatoes, boiled for an hour and diced (it will fall apart which is good for the creamy consistency)
6 hardboiled eggs, chopped fine
6 chopped green onions, while bulbs and green stalks
3 finely diced celery stalks
Salt and pepper to taste
Mayonnaise (I use my judgment here) The goal is a somewhat creamy texture
Mix really well and refrigerate till ready to serve.
