Grammy Viv’s Apricot Kugel
It’s National Noodle Day (yippee!) and I’m celebrating with Grammy Viv’s Apricot Kugel AND a National Noodle Day Blog Hop!
My mother-in-law used to make a version of this delicious Apricot Kugel for her family. If you aren’t familiar with kugel, it’s a sweet or savory egg noodle casserole. Viv kindly shared the recipe with me a few years ago and it’s become a fave for this Karlinsky clan as well. I added the raisins and cinnamon but you certainly don’t need to. If you aren’t into raisins, it’s an easy ingredient to omit.
- 12 oz Broad Egg Noodles
- 1 pint of sour cream
- 1 pint of cottage cheese
- 1 stick of butter (melted)
- 4 eggs
- 1/4 cup of raisins
- 1 tsp of cinnamon
- 18 oz jar of apricot preserves
- Preheat oven to 350 degrees
- Coat a 13 x 9 inch dish with cooking spray
- Boil noodles and drain
- Transfer noodles to a large boil
- Add remaining ingredients one at a time and mix well
- Bake for one hour or until nicely brown
MMM… this sweet casserole makes a perfect side dish to a savory main course. The kids will love it.
