Hi Friends! It was a happy, busy weekend. A soccer game, birthday party, date night, fine art show and antique show. My assistant attended the Sand Point Antique and Design Market show with me. She fell in love with this little vanity and helped to attract all sorts of shoppers to this booth. It was a lot of fun. And there's another show– 2nd Saturdayz, at the same location coming up in November: I'm really excited about this one too. White Bean Chicken Chili
Ingredients 2 tablespoons vegetable oil 1 onion, chopped 2 cloves garlic, minced 1 (14.5 ounce) can chicken broth 1 (18.75 ounce) can tomatillos, drained and chopped 1 (16 ounce) can diced tomatoes 1 (7 ounce) can diced green chiles 1/2 teaspoon dried oregano 1/2 teaspoon ground coriander seed 1/4 teaspoon ground cumin 2 ears fresh corn 1 pound diced, cooked chicken meat 1 (15 ounce) can white beans 1 pinch salt and black pepper to taste Directions Heat oil, and cook onion and garlic until soft. Hi Ghouls + Goblins… It's scary how much I enjoy this time of the year. I have a major sweet tooth and Halloween is my "cover" for buying (and of course eating) massive amounts of candy corn.
