Mexicali Hamburger Casserole

Ingredients

1-1/2 lb. lean ground beef

1 15-oz. can Mexican-style diced tomatoes

1-1/2 cups frozen whole kernel corn, thawed

1/2 cup plus 2 tablespoons finely shredded Mexican cheese blend, divided

1/2 cup all-purpose flour

1/2 cup yellow cornmeal

1 Tbsp. sugar

1-1/4 tsp. baking powder

1 egg, beaten

2/3 cup milk

2 Tbsp. cooking oil

Directions

1. Preheat oven to 350 degrees F. In 12-inch skillet cook and brown beef; drain off fat. Stir in undrained tomatoes and 1 cup of the corn; heat through. Transfer to greased 2-quart baking dish. Sprinkle with 1/2 cup of cheese.

2. For corn bread topping, in medium bowl combine flour, cornmeal, sugar, baking powder, and 1/2 teaspoon salt. Stir in egg, milk, and oil. Evenly spread on beef mixture. Sprinkle remaining 2 tablespoons cheese. Bake, uncovered, 30 minutes or until topping is set. Let stand 5 minutes.

Splendid Succulents Project

What do you think of succulents? I've been very taken with them lately. They don't require as much water as many types of plants, or need to be planted in deep pots. Their roots do well in shallow containers– making them perfect for my less-than-perfect vintage and bargain finds.

Supplies: I used some stained china teacups, a broken bird mug, a marred lusterware bowl, and a bowl from Target's dollar bin for containers. You'll also need succulents, gravel and dirt. To make the little flags, I used plastic toothpicks and Japanese Washi Tape (this tape is Cath Kidson by Chronicle), and scissors.

Take the plant and roots in both hands and twist about midway through the roots, discarding the bottom part.

Place a layer of gravel in the bottom of the container, about 1/4 -1/2 inch thick.

Add dirt (not everyone uses dirt, many people just use gravel, but this was the advice I got from a woman who grows succulents).

Position the succulents– go for balance and symmetry if you're using more than one plant. Add a little gravel on top if you like.

I think it's SO cool how the plants look like flowers.

To make tiny flags measure out some tape, affixing it to the toothpick.

Fold it back upon itself.

And cut a little triangle out to make the flag shape. You can use a contrasting tape pattern too.

I was so glad to have a use for this broken bird mug.

It's so pretty how the plant seems to pick up the pink in this bowl.

Hi Friends!

First I want to tell you I have been feeling sad and frustrated by Blogger lately. When I try to leave comments I get this message basically saying "Blogger isn't working… sorry!" Although my blog isn't on blogger, most people/bloggers are, so please accept my apologies if you haven't heard from me lately. I'll keep trying.

Well I did. Does anyone know what I'm talking about?

2nd Saturdayz in Snohomish this Weekend

2nd Saturdayz

Hello! I am a BIG fan of the 2nd Saturdayz Market Flea Market here in the Seattle area.

Promoters/Vendors Linda Morrison and Deb Bock have this crazy talent for creating and displaying vintage and up-cycled things. I have an immediate two-step reaction when I go to their flea market. It throws me into a swoon and then I quickly whip out my wallet. It's 2nd Saturdayz's one year anniversary this weekend and the ladies are celebrating in style. The show will be in Snohomish this Saturday May 14th. And I am darned excited! See you there….
