Yummy Wednesday: Banana Split Ice-Cream Cake

Hi Friends.

I saw this recipe in the recent edition of Family Fun Magazine and I thought… This is my kind of recipe!  A Banana Split and a Cake– together?  What could be better?  Both of my kids had their "grand finale" performances today after a week of drama camp… and I wanted to surprise them with this "after the show" treat. And I wanted an excuse to make it!  Because my Mom taught me to "Use what I have" I made a few substitutions I'll put in italics.

Ingredients

2 cups graham cracker crumbs (I used 2 1/2 cups, 2 cups for the crust and 1 cup for the top)

1/2 cup butter, melted, plus 1/4 cup butter

4 to 5 medium bananas, sliced into 1/2-inch-thick rounds

1-1/2 quarts strawberry ice cream, softened

1 cup chopped walnuts (I used peanuts)

1 cup chocolate chips (I used crumbled up Hersey's bars)

1 cup confectioners' sugar

1 cup evaporated milk

1 teaspoon vanilla extract

1 (8-ounce) container nondairy whipped topping (I used 2 containers!)

Instructions

In a small bowl, combine the graham cracker crumbs and the melted butter. Set aside 1/2 cup of the mixture, then press the remainder into the bottom of a 9- by 13-inch pan.

Place the bananas in a single layer over the crust.

Spread the softened ice cream on top and smooth.

Sprinkle the nuts on the ice cream, then cover with plastic wrap and freeze until firm, about 1 hour.

In a large saucepan, melt the chocolate chips and the remaining 1/4 cup butter and stir until smooth.

Add the confectioners' sugar and evaporated milk. Cook, stirring constantly, over medium heat until slightly thickened and smooth, about 8 minutes. Remove the pan from the heat and stir in the vanilla. Cool the mixture, about 30 minutes, stirring occasionally. 

Pour the mixture over the ice cream and freeze until firm, about 45 minutes.

Spread the whipped topping over the chocolate layer and sprinkle with the reserved crumbs. Freeze for at least 3-1/2 hours. Remove the dish from the freezer 10 to 20 minutes before slicing. Serves 18.

I wish this looked like layer upon layer of yumminess– but my layers sort of melded together into a hot actually cold mess.  But I can report my little actors didn't seem to mind.  BIG Hug!  Malia

    This looks fabulous! I also wanted to add I’m soooo glad you got the google friend bar b/c I have tried to follow you three other times, and it never appears on my updates. I visit, but I miss out on the most ‘up to date’ cute stuff going on here. So….yay!
