Yummy Wednesday: Amy Clancy Salad
My dear pal Amy Clancy first made me this salad (gulp) eight years ago when I was pregnant with Max. She had a lovely baby shower for me in her backyard with tons of tasty "summer style" food.
Over the years, pretty much every guest from the party has asked me to get them this recipe. It's that good!
It's so funny to me to see the "real" name of the recipe… we all call it Amy Clancy Salad.
Note: You make this the night before and let all the flavors mix and mingle
Amy Clancy Salad (Chicken Salad & Twists)
Ingredients:
16 oz rotelle
½ cup sesame seeds, toasted
1 cup salad oil
2/3 cup soy sauce
2/3 cup white wine vinegar
6 T sugar
1 tsp salt
½ tsp pepper
3 cups cold, shredded cooked chicken
½ cup chopped parsley
½ cup thinly sliced green onions
8 cups torn spinach leaves
Directions:
Cook rotelle al dente. Drain. Rinse with cold water and drain again. Combine oil, soy, vinegar, sugar, salt, pepper, and sesame seeds. Pour over cooked, cooled pasta. Add chicken and toss gently. Cover and chill until next day.
To serve: Add parsley, onion and spinach. Toss lightly.
Love it!!! It was delicious btw. I enjoyed the different textures & flavors.
My husband is not one for cold pasta salad of any sort but this one he may just go for!! Looks delicious!

I love cold sesame noodle salad but sometimes it gets a little boring this sounds great and so nice for warm weather.
This sounds great. We have a Chinese inspired festival coming up in our town and this would be a great dish for one of the many parties.
