Yummy Wednesday: Amy Clancy Salad

My dear pal Amy Clancy first made me this salad (gulp) eight years ago when I was pregnant with Max. She had a lovely baby shower for me in her backyard with tons of tasty "summer style" food.

Over the years, pretty much every guest from the party has asked me to get them this recipe.  It's that good!

It's so funny to me to see the "real" name of the recipe… we all call it Amy Clancy Salad.

Note:  You make this the night before and let all the flavors mix and mingle

  1. This sounds great. We have a Chinese inspired festival coming up in our town and this would be a great dish for one of the many parties.
