Millicent and Malia: The Mystery of the Lemon Squares

 Hi Friends! What do you say we dig into Grandma Millicent's recipe box for a sweet treat? But first, I need your help… what is missing in this recipe for Lemon Sqaures? I've made it 3x and it isn't turning out right. Please leave me your suggestions in the comments. Grandma Millicent hasn't let us down yet… I'm sure we can sleuth this together.

Lemon Squares

Ingredients for Crust: 1 cup flour, 1/2 cup butter, 1/4 cup powdered sugar

Ingredients for Lemon Filling: 2 tablespoons flour, 2 eggs, 1 cup granulated sugar, 1/2 teaspoon baking powder, 1/4 teaspoon salt, 2 tablespoons lemon juice, 1/2 cup fine coconut, 1 teaspoon lemon rind.

Directions

1. Heat over to 350 degrees

2. Blend flour, butter and sugar. Press into an 8 x8 inch pan.

3. Bake for 20 minutes

4. Beat other ingredients, pour over crust and bake for 15 minutes.

5. Sprinkle with powdered sugar while hot

  1. The recipe is straight out of 1969 Betty Crocker’s Cookbook. Make sure to have the topping ready so you pour it over the hot crust and you can bake it until no imprint remains, usually 25 minutes, not 15. I make these every year for the 4th of July for at least 30 years, no problems. I am a retired Family and Consumer Sciences teacher (formerly called Home Economics) and I taught Chemistry of Foods for 16 years before retiring. Let me know if it works better for you. I also wait to dust with powdered sugar until a bit cool or at least do it twice so it does not melt.

  2. First of all what is turning out wrong?
    What’s the problem? That may help the sleuthing:)
    The coconut doesn’t sound right for lemon bars. It seems it should have more eggs and more lemon juice too.

  3. Maybe more lemon? I looked at Ina Gartens lemon bar recipe and she has a lot mor lemon….Just a thought! May be user error LOL! Hugs Malia and thanks to Millicent, may she rest in peace.

  4. I have never used coconut, but that does not make it wrong. I do use more lemon, about 1/2 cup and 3 large eggs. You might try granulated sugar in the crust, I do. I wait until the bars are completely cool before I dust on the confectioners sugar. Thanks for all your sharing and caring. Bless you and yours.
