Luscious Lemon Bars

This recipe for Luscious Lemon Bars recipe was passed down to me from my mother-in-law, Vivian. She said it was a family favorite when her kids were young… and it’s still a family favorite today! These lemon bars are tiny bit tart as well as sweet and… they literally melt in your mouth.

Luscious Lemon Bars a mouthwatering dessert recipe

They are also great to bring to barbecues and picnics. Believe me, you will be the most popular person there!

Luscious Lemon Bars – Ingredients

2 cups of flour and 1/4 cup flour

1/2 cup sifted confectioner’s sugar

1 cup butter or margarine

4 eggs

2 cups of sugar

1/3 cup fresh squeezed lemon juice

1/2 tsp baking powder

13 x 9 x 2 baking dish

*Preheat the oven to 350 degrees

First up, make the crust. Mix 2 cups flour with confectioner’s sugar. Cut in butter until mixture resembles crumbs. Spray the baking dish with cooking spray. Press the mix into the bottom of the dish and bake at 350 degrees for 20 minutes.

While the crust is baking, beat eggs until frothy. Gradually beat in sugar and lemon juice until smooth and fluffy. Sift 1/4 cup flour with baking powder and stir in egg mixture. Pour over baked crust, Return to over for 25 minutes. Cool in pan.

This freezes great. While still frozen, cut it into squares or rectangles (these are 3″ x 2″ and this recipe yields 10).

Before serving, top with sifted confectioner’s sugar.

    Is it possible to switch the sugar for a sugar substitute? Or will that change the texture and taste too much of the lemon bar?
