Yummy Wednesday + Blog it Forward Inspiration

Calling all cowgirls + people with a pioneering spirit… I'm giving away an autographed copy of The Pioneer Woman Cooks.  There's the link and you have four chances to win. The book is packed with Pioneer Woman's own photos and recipes.  I'll draw a winner Tuesday May 4th.

It's my Blog It Forward Day—  I'm so excited!  Today's recipe ties in with what's inspiring me right now.  As the weather warms up and summer draws closer, it's time to pull out the picnic basket and find a good spot to plop down.  And talk.  And eat.  And nap.

First let's make something tasty.

Eve's Deviled Eggs (Eve's my Mom and she's a really good cook)

Deviled eggs
Hardboil, peel, and halve six extra large eggs

Remove yolks to a small mixing bowl and:

Add 3 tbsp mayo

¼ tsp of seasoned rice wine vinegar (This makes it smooth)

Salt and pepper to taste

Mix thoroughly and stuff egg white cups

Garnish as you please with parsley or dill

What shall we pack for our picnic?

Thanks for stopping by.  Want to share a favorite picnic memory?  Leave me a comment. Mine was when my husband and I were lying on the grass in a park, dozing off, when suddenly a little dog ran right across his face.  That memory makes me smile… eight years later.

Keep blogging it forward– go see Pop Fizz tomorrow and say howdy!

  1. We do picnic breakfasts down at Edmonds beach. We take the camp stove, make eggs and bacon and watch the ferries go by. My favorite weekend activity in the spring and summer. BTW, Eve’s cooking is amazing!

  2. Hee hee! At least the dog just ran over Neal’s face and didn’t stop to mark its territory!
One of the last picnics we went to was sort of a potluck picnic. I carried my mother in-law’s curried eggs on my lap on the drive over. I didn’t realize the dish was leaking, and I ended up with two bright yellow curry oil stains on my shorts. Very embarrassing!
