Yummy Wednesday: Blackberry Crumble Top

Hello!  This recipe is courtesy of my Aunt Sylvia and Cousin Mitch.  I can't believe how delicious it is. Mitch told me a little secret– he doubles the crumble ingredients.  Yum!

Ingredients For Berry Mix

2 Cups Blackberries

2 Cups Rhubarb (I used 4 cups of blackberries, no rhubarb handy)

1 Tablespoon Tapioca to reduce runniness (I didn't have any but it turned out great anyway)

1/2 Cup Sugar

Ingredients for Crumble Top

1 Cup Oatmeal 

1/2 Cup Flour

Juice of 1 Lemon

1/4 Teaspoon Salt

1/2 Cup Brown Sugar

1/2 Cup Melted Butter

Directions:  Combine the berry mixture and and put it in a greased dish.  I used a square baking dish. Separately, combine crumble top ingredients in a large bowl and spoon on top of berry mixture.  Bake at 425 for 35 minutes.

  1. Oh me, oh my! I made an apple crisp yesterday that was actually a very similar recipe. It was yum, so I imagine blackberries would be even more super yum! Thanks for sharing!

  2. Oh yum! I am so going to make this ASAP this week for my birthday.
    I love summer, but kind of anxious to use the oven and bake when it’s cooler. ;)
