Shrove Tuesday
I had never heard of Shrove Tuesday (or Pancake Tuesday) until my neighbor and friend Nabila invited us over for it. It turns out that "Shrove Tuesday" is the day before Lent, and similar to the idea of Mardi Gras, it's a last hurrah before the Lenten fasts.
Just fold + enjoy!
l learned it's a tradition in the UK and elsewhere to enjoy pancakes on this day. The ingredients in pancakes (sugar, fat and eggs) are things that would be traditionally restricted during Lent. Nabila made mushroom and cheese crepes for dinner and nutella, strawberry and whipped cream crepes for dessert.
Basic Recipe for Crepes
Ingredients
1 cup all-purpose flour
2 eggs
1/2 cup milk
1/2 cup water
1/4 teaspoon salt
2 tablespoons butter, melted
Directions
In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

Happy Mardi Gras! Brendan and I just finished celebrating Fat Tuesday. We must have done something right because boy, am I am full. I made jambalaya, and we had several other cajun-type dishes.
