Greek Salad with Sausage
Summer is the perfect time to make a Greek Salad with Aidells® Sausage. It’s an easy-to-assemble meal that works beautifully for lunch or dinner. Paired with a glass of The Wine Group’s Cupcake® Wine, it’s an elegant and filling salad that you can serve to family and friends. I was recently asked by Aidells® and the Wine Group to create a recipe with their yummy sausage that complements my favorite wine. Aidells® Sausage is my family’s go-to staple. We love the yummy flavors like this Arthichoke and Garlic Smoked Chicken Sausage. I feel great about my kids enjoying Aidells® Sausages because they are gluten free and there aren’t any nitrates or added hormones. Every sausage is hand-crafted with all-natural chicken as well as fruits and vegetables. All those things are fabulous but the fact that these sausages are fully cooked and therefore– ready in 10 minutes(!) makes them a great choice for moms on the go.

Greek Salad with Sausage
Ingredients: One package of Aidells® Artichoke and Garlic Sausage, 2 cups of uncooked Rotini pasta, 3 cups of romaine lettuce and 3 cups of spinach leaves, 1 cup of cherry tomatoes (sliced in half), 1 cup of sliced mushrooms, 1 cup of artichoke hearts, 1/2 cup of sliced olives, 1/2 cup of diced cucumber, 1 cup of crumbed Feta cheese and 1 cup of fat free Italian salad dressing. This recipe serves 8-10.
First, cut the sausage into 1/4 inch rounds.
Since the sausages are already cooked, just sauté or grill them over medium heat for 8-10 minutes. While that is happening, follow package directions to cook the rotini.
Add all ingredients together except the feta and salad dressing and combine well.
Next all the dressing and sprinkle the feta on top.
What a lovely looking salad!
