Homemade Nordy Bars Recipe

When I was a teenager, my friends and I were lucky enough to get jobs at the Nordstrom Cafe in Bellevue, Washington. In those days, our high school was  across the street from the Bellevue Square Mall and Nordstrom was one of the mall’s anchor stores.

It was a wonderful job for a 16 year old. Coffee in the cafe costed 25 cents (and there were unlimited refills), we got a free meal every shift, had a fabulous boss and even got a discount on clothes. I loved it and made some lifelong friends and happy memories there.

My favorite thing that we sold there were Nordy Bars. They were sort of like cookies with nuts, chocolate chips, butterscotch chips and lots of ooey-gooey marshmallows. Nordstrom doesn’t make Nordy bars anymore, but when I someone high up from the Nordstrom food division, I told him how much I was craving  Nordy bars all these years later… and here’s the recipe he sent me.

Homemade Nordy Bars Recipe

Ingredients

Whole Unsalted Butter ½ stick

* If using salted butter omit the salt below.

Butterscotch Chips 12 oz

Light Brown Sugar ¾ cup

Pure Vanilla Extract 1 Tbl

Large Eggs 2 ea

All Purpose Flour 1-3/4 cup

Baking Powder 2 tsp

Salt, Kosher ½ tsp

Pecans, pieces 1 cup

Marshmallows, mini 2 cups

Chocolate Chips 12 oz

Directions

1. Sanitize all work areas, cutting boards, equipment and sinks used in the preparation of this recipe.

2. Melt butter, butterscotch chips and brown sugar in double boiler over medium high heat.

3. When chips are melted, remove from heat and mix using a handheld or stand mixer until cool (~85°F-90°F)

4. Add vanilla and eggs and mix until smooth.

5. Sift flour, baking powder, and salt. Add dry mixture into wet mixture and carefully thoroughly, scraping down the sides once.

6. Add pecans, incorporating well.

7. Add chocolate chips & marshmallows, mix until just incorporated.

8. Using gloved hands or an oiled spatula, spread into a lined 9″ x 13″ pan.

9. Bake in a pre-heated 300° convection oven or 350° conventional oven for 15 minutes. Rotate pan and cook until golden brown, about 10 more minutes.

10. Allow to cool completely. Cut bars into desired shape and serve at room temperature.
