Hey Cookie!
Up for a sweet treat? This recipe makes so many cookies, there will be enough for you to give away and still have plenty for yourself.
My sister-in-law Kelly shared this recipe for Butter Cookies with me a few years ago. It's been my "go to" holiday cookie recipe ever since. Here it is:
Kelly's Butter Cookies
1 cup butter
2 eggs
1/2 tsp lemon extract
1/2 tsp vanilla
1 cup granulated sugar
1 tsp cream of tartar
2 1/2 cups of flour
1/2 tsp baking soda
Cream butter. Add sugar and beat well. Add beaten eggs, then all remaining ingredients. Chill (2 or more hours). Roll on floured board. Cut and sprinkle. Bake for 10 mins (or until brown) at 350 on a greased cookie sheet. Makes a TON of cookies. Probably 4-5 dozen.
What's a good cookie without some good icing?
I call this Claudia's Icing although her daughter, my dear friend Amy P, says she thinks her Mom got it from the back of the powdered sugar box. I still prefer "Claudia's Icing" as a name.
Claudia's Icing
2 T. butter (softened)
1 tsp vanilla
Pinch of salt
1 box plus powdered sugar
1/3 cup milk
You can make it thicker by adding more powdered sugar. I like to divide the icing into bowls and add food coloring… spread the icing on the cookies then pile on the sprinkles!
