Yummy Wednesday: Annette Salad
This is my dear friend Annette's signature salad recipe. There are some unexpected ingredients in it that make the salad a little bit surprising and definitely yummy!
Salad Ingredients:
Spinach + other favorite salad ( Annette likes Butter Lettuce)
1/2 Cup Chopped Avocado
1/2 Cup Chopped Tomatoes
1/2 Cup Chopped Apple (Annette uses Fuji)
1/2 Cup Chopped Nuts
Dressing Ingredients:
Two thirds Olive Oil, One Third Rice Vinegar, Black Pepper to taste. Mix together then put on salad
Final Step: Add grated Parmesan Cheese ( Annette think this is the secret to deliciousness). She adds half a pint or more
It's REALLY good!
I am going to have to try this dressing – I eat salad at least once a day and am getting a little tired of balsamic and olive oil.
Looks wonderful. During the summer we eat our fair share of salads, and this one looks like a winner.
