Strawberry Coconut Bars

Don't you just love a recipe that doesn't require any special ingredients? Something that entails a walk to the pantry instead of a trip to the grocery store? A bonus– this dessert is dee-lish.

Strawberry bars 1
Ingredients: 3/4 cup butter, 3/4 cup brown sugar, 1/4 cup granulated sugar, 1 cup flour, 2 cups sweetened coconut (divided), 1-1/2 cups oatmeal, 3/4 cup raspberry preserves

Preheat oven to 375 degrees. Beat butter, brown sugar and granulated sugar together until fluffy.

Add flour, 1 cup of coconut and oatmeal. Mix together.

Set aside 1 cup of dough.

Press remaining dough even over the bottom of a 9 x 13 pan.

Spread raspberry preserves over the dough.

Crumble remaining dough over the preserves.

 Sprinkle 1 cup of coconut over the dough.

Pop in the oven for 25 minutes.
