This year, I got the chance to make my confections look even better with some pretty packaging from Martha Stewart Crafts.

Being a peppermint lover, I decided to create a recipe for a Chocolate Peppermint Loaf that would satisy my sweet tooth (and my friend Julie's chocolate habit).

Chocolate Peppermint Loaf (makes 5 small loaves)
Ingredients:  2 1/4 cups flour, 2 cups sugar, 3/4 cup unsweetened cocoa powder (I used Hershey's), 1 1/2 teaspoons baking powder, 1/2 teaspoon salt, 1 1/2 cups milk, 1 cup vegetable oil, 3 large eggs, 1 teaspoon peppermint extract, 2 cups semisweet chocolate chips, 1 cup finely smashed candy cane plus more candy cane pieces for garnish.

Instructions:
1. Preheat oven to 325 degrees
2. Spray cooking spray in 5 small bakeable trays
3. Combine all ingredients except the chocolate chips– gently fold them in last
4. Spoon batter into bakeable trays and place on middle rack of the oven
5. Bake for 1 hour (then check to see if loaves are done with the old toothpick trick). Let loaves bake until toothpick comes out clean. After removing from oven, sprinkle candy cane bits on top.

After the loaves cool off, you can package them up in a jiffy! I loved that I could bake right in these festive trays which did fabulously in the oven. It was so nice to have the matching labels and ribbon too… no hunting around for anything!
