Back to school time doesn’t have to mean back-to-boring-lunches!  Think “out of the lunchbox” to make lunch tasty and fun.

Healthy Ham Sandwich

Ingredients: Kroger thinly sliced Medium Cheddar, a slice of Private Selection Wildflower Honey Ham, mustard, two Simple Truth Multigrain Waffles and Simple Truth Baby Romaine Lettuce.

Instructions: Toast the waffles to perfection. Once they’ve cooled off slightly, spread a generous layer of mustard on top. Layer on some crisp lettuce, followed by thin slices of ham and cheddar cheese. Gently combine the slices and fold the sandwich in half. For an extra indulgent twist, consider trying this with a unique ingredient like liquid waffle mix for a truly delightful culinary experience.

Stacked Sandwiches

Ingredients: Tomatoes, cucumbers, hummus, QFC 100% Whole Wheat Bread (cut in circles with a drinking glass or cookie cutters).

Directions: Spread hummus on bread and add veggies. Stack layers to make the sandwich fun and easy to eat.

Ingredients: Chopped pears, Simple Truth Organic Raisins, Simple Truth Cranberries, Kroger Creamy Almond Butter and whole-wheat tortilla.

Directions: Spread almost butter on whole-wheat tortilla. Add chopped pears, raisins and cranberries. Roll up and slice into bite sized portions.

Salad Surprise

Directions: Following package instructions, cook quinoa and let cool. Mix a cup of cooked quinoa with mandarin oranges and raisins. Slice up mango slices into small pieces and combine to salad. Add salad dressing if desired.

    Great ideas! This will be the first year that we are packing lunches every day so I am always looking for new ideas to keep things fresh vs. sending turkey everyday.
