Cherry Salsa with Balsamic Vinegar and Basil
Hi Friends! I am so excited to share some exciting news and a delicious recipe with you. If you’re like me, you REALLY want to eat healthier and use local ingredients that are in season… but you sometimes feel stumped by WHAT to make. That’s where Seattle’s Whole Foods Interbay comes in!
I recently got the opportunity to spend a fun and educational evening at Whole Foods to celebrate the launch of their special Whole Plate area. This is a beautiful space where you can take cooking classes or even rent it out for your own events. Chef Anne Haerle is the Healthy Cooking Coach. She shared some amazing cherry recipes with us (they are in season now) including this yummy recipe for Cherry Salsa with Balsamic Vinegar and Basil.
- 2 cups sweet cherries, pitted and roughly chopped
- 1 jalapeño, stemmed, seeded and finely chopped
- 1/2 red onion, finely chopped
- 1/4 cup basil leaves, chopped
- 2 tablespoons balsamic vinegar
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
- Juice of ½ lime
- Toss all ingredients together in a large bowl. Cover and chill for at least 1 hour before serving.
- Serve on crackers with a smear of your favorite cheese.
- Add small ribbon of basil on top.
