Shrimp with Garlic and Citrus
This was my first adventure with shrimp… and I am happy to say it turned out great! (Phew)
Ingredients: 1 1/2 lbs medium-large shrimp, 2 garlic cloves (or garlic powder if you forget to pick up garlic), 4 tablespoons EVOO, 1 tsp kosher salt. 1/2 tsp black pepper, 1 of each: orange, lemon and lime sliced it into wedges
Prepare a medium-hot grill or place a grill pan over high heat. Peel the shrimp, leaving on the tail and the section right before the tail. Make a shallow cut all the way down and pull out the vein. Wash and dry the shrimp in a bowl. In a different bowl, combine the garlic, olive oil, salt and pepper. Add the shrimp and toss to coat.
Place the shrimp in a single layer on the grill or pan and cook until the bottom starts to turn pink, about 2 minutes. Using tongs, flip the shrimp.
Cook until other side turns pink, about 2 more minutes.
Serve immediately and encourage everyone to squeeze a little of each fruit on top.
