The Art of Entertaining for Valentine’s Day

I wanted to host an intimate evening for friends, featuring three Estancia wines: Pinot Noir, Cabernet Sauvignon and Chardonnay. I envisioned a lovely spread and a three course meal, featuring of of the wines for each course. By the way, Estancia wines are special. The grapes are grown in Monterey County in California where the climate conditions are midday heat followed by fog in the late afternoon… perfect for growing delicious wine grapes.
For the first course, I thought a savory appetizer paired with the Pinot Noir would be lovely. Since savor tastes work with well Pinor Noir, I sautéed some mushrooms in butter with and added a pinch of salt. Then I mixed the mushrooms with goat cheese and added the mixture to toasted crostini.
Continuing with the savory theme, flank steak sliders seemed like a great match for the Cabernet Sauvignon. Here’s my top secret flank steak recipe.
Flank Steak Recipe
Ingredients: 1 lb of flank steak (ask the butcher to tenderize it), 1/4 cup mustard, 4 chopped garlic cloves, 1/2 cup teriyaki sauce, 1/2 cup soy sauce, salt and pepper. You’ll also need horseradish sauce, slider buns and some sort of greens like baby lettuce or kale and a package of buns for the sliders.
1. Rub mustard all over both sides of the steak
2. Add chopped garlic (on both sides)
3. Mix the teriyaki sauce and soy sauce and marinate the meat in in for at least an hour.
4. Spray a cookie sheet with cooking spray and broil the steak for 10-15 minutes or until just pink in the center. Let it cool down and slice. This recipe makes sixteen sliders.
5. Toast the slider buns and pile add a dollop of horseradish sauce and flank steak. Top with greens.
For dessert, Apple and Pair Tarts served with Chardonnay was a fabulous end to the evening.
The tarts are really easy to make.
I just cut squares of Phyllo dough and molded them in muffin tins. Then I chopped up an apple and a pear and mixed it with 6 tablespoons of melted butter and 1/3 cup of brown sugar. Then I spooned the mixture in the cups and baked them at 350 degrees for about 15 minutes or until golden brown.
