This recipe is from my Mom– she's a fantastic cook.
Stuffed Mushroom Appetizers
Ingredients: 1 lb of mushrooms, 1/3 cup of butter, Olive Oil, 4 cloves of minced garlic, 4 tablespoons minced red onion, 1/4 cup white wine, 4-6 pieces of bacon (cooked and torn into pieces), grated parmesan cheese
Directions
Remove stems
Gently clean and wipe mushrooms with a damp paper towel
Slice to desired thickness
Melt 3/4 stick of butter with some olive oil
Saute 4 minced cloves of garlic and 4 tbsp minced red onion
Add mushrooms and continue sauté
Add a little white wine
Cook till medium soft (mushrooms still have some body)
Scoop garlic and onions into mushrooms
Place in serving dish
Sprinkle with bacon and parmesan cheese
Serves 4-6
