Iced Peppermint Donuts

You know who would love one of these donuts? Santa Claus! Or actually any one who likes peppermint…
Iced Peppermint Donuts
- 2½ cups cake flour sifted
- 1 cup granulated sugar
- 2½ teaspoons baking powder
- ¼ teaspoon ground cinnamon
- 1½ teaspoons salt
- 1 cup buttermilk
- 2 eggs lightly beaten
- 3 tablespoons butter, melted
- 1/2 tsp of Peppermint Extract
- 1/2 cup of crushed candy canes
- Doughnut pan
- Preheat oven to 425 degrees
- Spray doughnut pan with non-stick cooking spray
- In a large mixing bowl, sift together flour, sugar, baking powder cinnamon and salt
- Add buttermilk, eggs and butter and stir until just combined
- Mix in peppermint extract
- Fill each doughnut cup approximately ½ way full
- Bake 10 minutes or until the top of the doughnuts spring back
- Run a butter knife along the rim to pop the doughnuts out
- Finish with store bought icing and crushed candy canes
These donuts are just a little sweet and just a tad pepperminty with a bit of crunch. In other words… delicious!
