Yummy Wednesday: Amy’s Apple Puffed Pancakes

This is a great weekend morning recipe.  It comes from my dear friend Amy P.  

apple puffed pancake

 Ingredients:

  • 6 eggs
  • 1 1/2 cups milk
  • 1 cup all-purpose flour
  • 3 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 cup butter or margarine
  • 2 apples peeled and thinly sliced (I leave the peel on)
  • 2 to 3 tablespoons brown sugar

Preheat oven to 425.  In a blender or large bowl, mix eggs, milk, flour, sugar, vanilla, salt and cinnamon until blended.  If using a mixer, batter will remain slightly lump.  Melt butter or margarine in a 12 inch fluted porcelain quiche dish or a 13 x 9 baking dish in oven. Add apple slices to baking dish. Return to oven until butter sizzles.  Do not let brown. Remove dish from oven and immediately pour batter over apples. Sprinkle with brown sugar.  Bake in middle of oven for 20 minutes or until puffed and brown.  Serve immediately.

Feel happy + full!

    awww…I am so glad I found your blog. My little girl (now 5) STILL says Yesterday, on Tuesday (Or Friday…) How cute. You have a sweet place here.

    I found you via Today’s Creative Blog. Congrats on being featured!
    My family has been making these (minus the apples, though I do them that way sometimes) since I was 16. We call them Hootenanies! Or if you’re my 23-month-old, “nannies.” :)
    I saw that you’re going to The Farm Chicks. Me too, though I only have to travel 10 minutes. :) It’s one of the highlights of my year!
