Millicent and Malia: Zucchini Frittata
Hello! Thanks for dropping by for another Millicent and Malia recipe. I am having a fantastic time going through my Grandma's recipe box and making some of her favorite dishes. So far I've made her Lemon Velvet Cake and Frosted Coffee Bars. With a sweet tooth like mine I could easily just do desserts– but I think I better make something a little healthier.
Today's recipe feels fresh even though it's at least forty years old.
Zucchini Frittata
Ingredients: 1 lb of zucchini, 1 tsp salt, 4 eggs, 1/2 cup milk, 1/2 cup italian bread crumbs, 1/4 cup parmesan cheese and 2 tbs melted butter.
Directions: Coarsely grate two cups of zucchini.
Put zucchini in a colander, sprinkle with 1 tsp salt and let it stand for one hour. Drain, put in towel and squeeze out extra moisture.
Combine in a bowl with 4 eggs slightly beaten, 1/2 cup each of milk and bread crumbs,1/4 cup parmesan cheese, and 2 tbs melted butter. Pour into a buttered baking dish.
Bake at 375 for 30-35 minutes or until knife inserted in center comes out clean.
