Cilantro Lime Rice Recipe
You know those nights where you want to serve the family a delicious side dish– but you don’t have a ton of extra time to spend making it? That’s the night you take plain rice and give it some delicious flavor.
Supplies: Rice, juice from two limes, canola oil, cilantro and salt.
First: Make a pot of rice (6 cups) in your rice cooker or make some instant rice on the stovetop. I love when it’s all light and fluffy.
Next juice two limes (you’ll get around 1/4 of a cup).
Add a capful of canola oil to the lime juice. Next, chop up 1/4 cup of cilantro. Combine the juice mixture, cilantro and a pinch of salt. Mix it in with the rice.
Tip: To make a nice presentation, pack it into a bowl and gently dump it into another bowl. Garnish with more cilantro.
