I wanted to create a delicious dish for a Memorial Day gathering, so I headed to Grocery Outlet’s NOSH section to grab the supplies, plus a few other ingredients AND I also found a fun red baking dish that I knew would be perfect for Memorial Day and 4th of July.
Here’s my recipe for Tangy Mexcian Bake. It makes a great appetizer or dinner! It’s one of those crowd pleasing recipes that everyone loves.
Tangy Mexican Bake
- 1 lb ground turkey
- 4 boxes of Annie’s Cheesy Taco Pasta
- 1 package of sun dried organic tomatoes
- 1 onion
- 1 cup of shredded mexican blend cheese
- 1/2 cup of non fat milk
- 1 bag of Lundberg Multigrain chips (for dipping)
- Cilantro (to garnish)
- Preheat oven to 350 degrees and spray a casserole dish with cooking spray
- Follow directions on Annie’s package to make pasta
- Mix in 1/2 cup of milk and seasonings (from pasta boxes)
- Chop up the onion and sun dried tomatoes
- Brown the turkey and onions
- Mix together the sun dried tomatoes and pasta
- Combine the turkey mixture and pasta
- Spoon into baking dish
- Sprinkle a half cup of shredded cheese on top
- Cover with foil and back for 20-25 minutes until the cheese is melted
- Garnish with cilantro
- You can either spoon the Tangy Mexican Bake onto the chips and enjoy as a appetizer or serve as a main dish
This is the perfect dish to bring to a summer gathering or party.
Just dip a chip to enjoy as an appetizer!
Or serve it individually.
